Cherry Loaf
One good thing about summer is the cheeries . We cannot have enough of them. Even though we don't mind having it raw; trying different and variety desserts out of them is fun. This cherry loaf was just an outcome of a such a trial and we loved it. The bite into a juicy piece of cherry within the loaf piece is so refreshing.
The loaf is very easy to put together. At the same time, it is so addictive and gets over really quickly that you may want to bake more than a loaf at a time if you would want them to last more than a day :). Here is the recipe for the cherry loaf.
Ingredients
- 1 1/2 cups of all purpose flour
- 1 tsp of baking powder
- 1/2 tsp of salt
- 1/3 cup of melted butter at room temperature
- 1 cup of white sugar
- 1/2 tsp of vanilla extract
- 2 large eggs
- 1/2 cup of milk
- 1 tsp of lemon zest
- 1 cup of pitted and quartered cherries
- In a bowl, combine the dry ingredients 1-3. Whisk it to spread it evenly.
- In another bowl, beat the eggs. To the eggs add ingredients 4-6. Beat it well.
- Add the dry ingredients and milk alternatively to the egg mixture while you beat it simultaneously.
- Toss the cherries in about 2 tbsp of flour, which would prevent the cherries from sinking to the bottom of the baking pan.
- Add the cherries and the lemon zest to the batter and fold it in gently.
- Grease a loaf pan and pour in the batter into it.
- Preheat the oven to 350 F.
- Bake the loaf for about 50-60 minutes or untill a toothpick inserted comes out clean.
- Let the loaf cool down completely on a wired rack. Serve it as is or with some sugar glaze drizzled on top of the loaf.
- Do not overmix the cherries else they tend to break and may change the colour of the batter.
- You could make a glaze to drizzle over the loaf. Mix 1/2 cup of powdered sugar and 1-2 tbsp milk to form a lump free paste consistency that could be drizzled over loaf before you slice it.
