Eggs Kejriwal

Simple breakfasts with complicated names can make my lil one finish it without throwing fits. And it can also spark a little conversation about how the dish got its name :). Which in this case was so funny when I announced what we were going to have for breakfast. Isn't that, little joys of having a family breakfast over the weekend, when its rainy outside and there is no rush to get to anywhere and you have all the sweet time in the world to just sit and relax and have your breakfast and chit chat as a family.




When I got to introduce myself to Eggs Kejriwal, I was so curious to know and try it. It is one of the different versions of bread and egg combo that one can have for breakfast. The melted cheese and the sunny side up, sandwiched between the bun when taken a bite into, can be just a yummy treat everyone would wish to start a day with. So if you are an egg lover and love having it for your breakfast, then I would definitely recommend to try it. You would love it.




Ingredients 
  1. 2 Burger Buns
  2. 2 eggs
  3. 2 cheese slices
  4. 1/2 cup of onion, finely chopped
  5. 1 tomato, finely chopped
  6. 3-4 tbsp of chopped coriander/cilantro leaves
  7. 2 green chillies chopped finely
  8. Pepper to taste
  9. Salt to taste
  10. Butter as required
  11. Oil as required 
Method
  • Slice the burger buns into half if not split into half already. Apply little butter to the split sides of the buns. 
  • Heat a non stick pan, and toast the buns on it and keep it aside.
  • Into the same pan, add a tbsp of oil. Add the chopped onion and green chilly and saute it. Add the tomatoes, coriander leaves and salt. Cook for a minute or two and remove it from the pan and keep it aside.
  • Into the same pan, add a tsp of oil and spread it. Break open both the eggs into the pan as sunny side up. Sprinkle salt and pepper. Cover and cook on medium-low flame for 2 minutes.
  • Meanwhile, take the bottom portion of each bun and place the cheese slices on it. Place a layer of the sautéed onion and tomato on top of it. Place the cooked sunny side ups on top of it. Add little butter to the pan and now place the bun and eggs back into the pan and cover it and let it cook untill the cheese melts(takes usually 1-2 minutes).
  • Remove it from the pan to a plate. Place the toasted upper side of the bun by its side and serve hot having paired it with some hot drink of your choice
Tips
  1. I have added the green chillies in the sautéed mixture and it can be spicy. You can use pepper instead, to control the spiciness.
