Green tea mini pound cake with cheese
I got this pan for almost 1 year, but never had a chance to use it ^^".
It's small and cute, with this small portion, it's good when you use it to make something that's rich in taste. It's the reason, why I choose to bake this full flavour matcha cake into this pan. If you love matcha I think you will love this cake. It's packed with load of matcha (one and a half tablespoon for this little cake!!!!), and to make it more interesting, there are small little pieces of salty cheese and sweet dried cranberry too.
I use snow brand 6p processed cheese in this recipe, but any mild flavour cheese is OK (such as mild cheddar or tasty). If you can't find the same pan as mine, you can use 16 x 6.5 cm pan instead. Feel free to choose other kind of dried fruit, it's your cake anyway, hehe.

60 g .......................... Cake Flour
1/2 tsp ...................... Baking powder
1 1/2 tbsp .................. Green tea powder
60 g ........................... Unsalted butter
................................... Pinch of salt
50 g ............................ Icing sugar
1 ................................. Egg
2 tbsp ......................... Whipping cream
35 g ............................ Processed cheese (or mild Cheddar cheese), cut into small pieces
20 g ............................ Dried cranberry
Preheat an oven to 170℃
Line 20 x5 cm. Pan (or 16 x 6.5 cm.) with baking paper.
Sift flour, baking powder and green tea powder together, set aside.
Beat the butter with slat until smooth.
Pour icing sugar into the bowl, beat to combine.
Put egg into the bowl, and beat until combine.
Pour half of the flour mixture into the bowl, whisk to combine.
Pour whipping cream into the bowl, whisk to combine.
Put the rest of the flour mixture into the bowl with cheese and dried cranberry.
Fold to combine.
Put into the prepared pan, and smooth the top.
Bake for 35-40 minutes, or until cake spring back when touch lightly.
Remove from the oven, let it cool in the pan for 10 minutes.
Remove from the pan and let it cool completely.
