Hot Ginger Coffee

When the temperatures drop, nothing quite hits the spot like a warm beverage! I had extra crystallized ginger left over from Christmas cookie baking, and I've started collecting recipes to use it in.  One of them was this Hot Ginger Coffee from Taste of Home, submitted by Audrey T.

There was only one problem: I do not have a coffee pot, I have a single serve pod machine.  A quick Google search yielded lots of ways to make coffee without a pot, and I decided the stove top method was the best option for me.

I added the ingredients to a saucepan and brought the water to a boil.  I shut off the heat, and watched for all the grounds to sink to the bottom.  It took about 4 1/2 mins or so. I then poured the coffee mixture through a strainer lined with a filter into cups.

If you like your coffee on the sweeter side, add sugar at this point to taste. I topped it with some whipped cream and orange zest. And though the title says hot, this is great cold too.  I'm the only coffee drinker, so I refrigerated the mixture and drank it over ice the following morning.

Hot Ginger Coffee
6 tablespoons ground coffee (not instant)
1 tablespoon grated orange zest
1 tablespoon chopped crystallized ginger
1/2 teaspoon ground cinnamon
6 cups cold water
Whipped cream, cinnamon sticks and/or additional orange zest, optional

Combine the coffee, orange zest, ginger and cinnamon; pour into a coffee filter. Brew according to manufacturer's directions.

Pour into mugs; if desired, garnish with whipped cream, cinnamon sticks and orange zest.
