New England Apple Cake

I was completely blown away when my selection of products arrived from Imperial Sugar for AppleWeek!  They were so incredibly generous with the amount of both brown and regular sugar that they sent, along with a lovely baking mat and apron.

We always teased my Gram that she should wear an apron when she baked, because she'd always be covered with as much ingredient as what went into the recipe.  Her base whoopie pie recipe was my jumping off point for my Caramel Apple Whoopie Pies, and I also found this New England Apple Cake in her recipe box.

I made the recipe as written, but omitted the nuts due to allergies.  She just dusted the finished cake with confectioner's sugar, but my guys really love a glaze. I combined confectioner's sugar, pure New England maple syrup, and some milk and drizzled it over the cooled cake.


This went so fast, I barely had time to get photographs of it.  Packed full of flavor, so moist, despite using three types of sugar, it's not overly sweet at all. I love being able to connect to my Gram though these recipes, it's really special to have them in her own writing, and be able to share them with my family.

New England Apple Cake
1 stick butter, room temp
1 c sugar
1 c brown sugar, packed
3 eggs
2 t vanilla
2 1/4 c flour
2 1/4 t baking soda
1 t salt
2 t cinnamon
1/2 t nutmeg
7 c cooking apples, coarsley chopped, loosely packed
3/4 c chopped walnuts (omitted)
Glaze - optional
1/2 c confectioner's sugar
1 T maple syrup
2 t milk (or water)

Heat oven to 350.

In a large bowl, cream together butter and sugars. Beat in eggs and vanilla until well blended. In medium bowl, combine next 4 ingredients. Add to creamed mixture, stirring to combine thoroughly.  Stir in apples and walnuts. Spoon into a greased 10" bundt pan or tube pan.

Bake 50 to 60 minutes or until a toothpick comes out clean when inserted near center. Cool in pan on rack for 10 minutes, then turn out and allow to cool completely.  Dust with confectioner's sugar or drizzle with maple glaze.

For the glaze:
Combine 1/2c confectioner's sugar, 2t milk, and 1T maple syrup until smooth.  I like to use a measuring cup with a handle, makes it easy to control where the glaze is going.
