Simple Yellow Butter cake with chocolate frosting


Because I bake almost everyday, and it's not easy to eat all of them, haha, so my best solution is giving, sometime my niece has to take them to school to give them to her teachers and friends.




But I'm so addicted to game lately, and rarely bake, until my niece told me that I should bake something for her (she always takes my cake or cookie to eat at school, and her teacher said that they missed my cake) -*-. It's not hard for me to bake, and I love baking but the problem is I have to make easy menu, so I will have enough time to go back to play game, hehe.
Simple butter cake is what I choose, easy and takes very little time to make, and when you add chocolate frosting on top, people will think that you spend so much time and attention to the cake (well, I put love and attention into the cake too, but I have to keep my time).
The key ingredient that makes this cake special is vinegar, it makes the cake soft and moist, it's so amazing that only 1 1/2 tsp of it can make big different in the texture. 
Because I want my cake to be very soft, I use cake flour (the texture is crumbly and melt in the mouth), but if you prefer firmer texture you can use all purpose flour instead. As I wanted my niece to think that I made very special cake, I put the frosting on top of my cake with sprinkles, but the cake itself is good too.

Simple Yellow Butter cake with chocolate frosting
Make 18 cm cake


Yellow Butter Cake

80 g .................. Whipping cream
1 1/2 tsp ........... Vinegar
85 g .................. Cake flour
3/4 tsp ............... Baking powder
60 g ................... Unsalted butter
1/8 tsp ................ Salt
1/2 tsp ................ Vanilla extract
90 g ..................... Granulated sugar
1 .......................... Egg

Chocolate Frosting

65 g ..................... Unsalted butter
120 g ................... Icing sugar
10 g ..................... Cocoa powder
35 g ..................... Whipping cream






Preheat an oven to 180C.
Line 18 cm round cake pan with baking paper.
Sift the flour and baking powder together, and set aside.


 Mix the whipping cream and vinegar together, and rest for 15 minutes.


 Beat the butter with salt and vanilla extract until soft.
Pour the sugar into the bowl, and beat to combine.


 Put the egg into the bowl.


 Beat to combine.


 Put half of the flour mixture into the bowl, and beat to combine.


 Pour the whipping cream mixture into the bowl and beat to combine.


 Put the rest of the flour into the bowl.


 Beat to combine.


 Put into the prepared pan, and smooth the top.


 Bake for 25-30 minutes, and let it cool completely before frosting.


 Beat the butter until soft.
Add the icing sugar gradually, and beat to combine.


 Sift the cocoa powder into the bowl.


 Pour the whipping cream into the bowl.


 Beat until fully combine.



Spread the frosting over the cake, decorate with sprinkles, and enjoy!!!
